For David the joys of cooking with wood fired ovens are numerous; ‘The flavours are outstanding of course but I also love the fact that you have to cook by instinct and not by wrote, every oven has it’s own quirks. I also enjoy the idea that when I cook with a wood-fired oven I’m cooking just as a Roman baker, medieval housewife or Victorian chef would have done. That sense of being one of a line of wood fired cooks spanning centuries is rather wonderful.’
Whether at his school in Devon or any of the other venues he teaches at, David’s aim is always to demonstrate just how versatile wood fired ovens are and to inspire people to use their own ovens to full effect.
