Make the delicious apple crumble recipe made by Kate on Escape to the Farm.

Ingredients

  • 6-8 apples – peeled, cored and sliced
  • 1 tbsp sugar and the same of water
  • Clove root – 1-2 depending on size
  • 6 oz oats
  • 3 oz acorn flour
  • 5-6 oz butter chilled
  • 3oz dark brown sugar

Method

  1. Slice apples and cook them down with a bit of water and sugar, not all the way to mush but until they are soft. Move to an oven proof bowl.
  2. Snip the clove root and sit it on top of the apple to infuse.
  3. Slightly blitz the oats. Add to a bowl together with the acorn flour. Use 2/3 oats and 1/3 acorn flour.
  4. Add butter (not too soft, can still have a chill to it) and dark brown sugar then mix together with your hands until all incorporated.
  5. Add the crumble to the top of the cooked apples.
  6. Put into oven at 170 degrees and check after 25 minutes.
  7. Take out the oven and serve.

Acorn flour

You can buy acorn flour from Korean shops or on Amazon from ‘Dary Natury’ but if you want to make your own, here’s how:

  • Foraged acorns

Method

  1. Pick loads of acorns and leave to dry (away from mice) until they are crispy and easy to peel. You can store some for the future as they will keep.
  2. Peel the acorns and blitz them with water until well blended.
  3. Pour into a bowl of fresh water. leave to sit for up to 24 hours.
  4. Keep returning during the 24 hour period to scoop off the gunk. Add clean water to it until the water stays clear and you get a layer of acorn ‘grit’ at the bottom of the bowl. If you taste it, it will be bitter and dry.
  5. Then drain out the acorn ‘grit’, add to another tray and dry out again in an oven at a low heat. Then you will have acorn flour.
